Favourite Apple Pancakes

 

 

1 egg
1/2 cup buttermilk*
1/2 cup applesauce
2 tbsp salad oil
1 cup flour
1 tbsp granulated white sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Beat egg, add remaining ingredients in order listed and beat with rotary beater until smooth. Grease heated griddle if necessary. To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.

Pour batter from tip of large spoon or from pitcher onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles but before bubbles break Cook other side until golden brown.


*If you don’t have buttermilk, measure 1 tbsp lemon juice or vinegar into a 1 cup measure, fill with milk and let stand 5 minutes.
